Method

Palo Santo Infused Gin:

  1. Infuse Gin: Add 5 grams of Palo Santo wood to a bottle of Condesa Gin Clásica.
  2. Infusion Time: Allow the Palo Santo to infuse in the gin for 4 hours.
  3. Strain: After 4 hours, strain the gin to remove the Palo Santo wood.
  4. Re-bottle: Re-bottle the infused Condesa Gin Clásica.

Palo Santo Martini

  1. Prepare Glass: Ensure your Martini glass is thoroughly chilled.
  2. Smoke Martini Glass: Carefully smoke the chilled Martini glass with Palo Santo wood. Invert the glass over the smoke to capture it, then quickly seal it (e.g., with a coaster or plastic wrap) to hold the smoke.
  3. Combine Ingredients: In a mixing glass, add the Palo Santo infused Condesa Gin Clásica and Dry Vermouth.
  4. Add Ice: Fill the mixing glass with ice.
  5. Chill: Stir gently for 20-30 seconds until the mixture is well-chilled.
  6. Serve: Remove the seal from the smoked Martini glass and quickly strain the cocktail from the mixing glass directly into the smoked glass.
  7. Perfume and Garnish: Express the oils from a lime peel over the drink by twisting it, then rub the peel along the rim of the glass to perfume it, and finally place it into the cocktail as a garnish. Serve immediately.
