Ingredients

  • 50ml Ebba Coastal Cornish Dry Gin
  • 20ml Fresh Lime Juice
  • 20ml Rhubarb Syrup
  • 10ml Sugar Syrup
  • Ice
  • Thin Slice Of Fresh Rhubarb
  • Lime Wheel

Method

  1. Chill the glass: Place a coupe glass into the freezer to chill before preparing the cocktail.
  2. Measure the ingredients: Pour 50ml Ebba Coastal Cornish Dry Gin, 20ml fresh lime juice, 20ml rhubarb syrup and 10ml sugar syrup into a cocktail shaker.
  3. Add the ice: Fill the cocktail shaker generously with ice cubes.
  4. Shake the mixture: Fasten the lid securely and shake hard for 10–12 seconds until the outside of the shaker feels well chilled.
  5. Strain the cocktail: Double strain the liquid into the pre-chilled coupe glass to remove any small ice shards.
  6. Garnish and serve: Drape a thin slice of fresh rhubarb over the rim and add a lime wheel before serving immediately.
