This recipe is a unique take on the classic Zombie, highlighting the flavours of Damoiseau rums with aromatic spices.

Ingredients

  • 40ml Damoiseau Gold rum 40%
  • 10ml Damoiseau Blanc rum 40%
  • 10ml Pomegranate molasses
  • 20ml Sugar cane syrup infused with cinnamon and ginger
  • 20ml Freshly squeezed lime juice
  • 50ml Grapefruit juice
  • 1 drop Absinthe
  • A few dashes Angostura Bitters

Method

  1. Combine Ingredients: In a cocktail shaker, combine the Damoiseau Gold rum, Damoiseau White rum, pomegranate molasses, cinnamon and ginger infused sugar cane syrup, lime juice, grapefruit juice, and the single drop of Absinthe.
  2. Add Bitters: Add a few dashes of Angostura Bitters to the shaker.
  3. Add Ice: Fill the shaker generously with crushed ice.
  4. Shake Vigorously: Secure the lid and shake vigorously for approximately 15−20 seconds, or until the shaker is well-chilled and frosty on the outside.
  5. Prepare Glass: Fill your tall glass or Tiki mug generously with fresh crushed ice.
  6. Strain: Strain the contents of the shaker (preferably double straining through a fine-mesh sieve) over the fresh ice in the glass.
  7. Garnish and Serve: Garnish with a fresh mint sprig or a citrus twist if desired, and serve immediately.
