Tasting Notes

Nose: Vibrant floral and herbaceous aromas, highlighted by fresh London wildflowers and the delicate sweetness of elderflower.

Palate: A revitalising blend of green anise and fennel seed, layered with cooling peppermint and complex herbal depth.

Finish: Clean and bright, with lingering notes of grand wormwood and a refreshing minty lift.

Food Pairings

Light Seafood: Seared scallops or oysters provide a delicate brininess that complements the floral elderflower and meadowsweet notes.
