Token Ribolla 75cl

Grown at high altitude, the Ribolla Gialla grapes are harvested by hand into small crates. A small portion of the grapes are fermented on the skin in a cask to add complex aromatics and texture. The remaining grapes were pressed after a night of cryo maceration.

Token are bright, pure and authentic Ribolla Gialla and Franconia wines from Dmytro Goncharuk and Alyona Mykhailova, a Ukrainian couple with years of experience in London restaurants.

Facing the difficulties that the rest of the hospitality experience in Spring 2020, the couple decided to buy a boat, “Alethea”. They spent their days sailing and dreaming of the future, making ambitious plans involving opening bars, starting a winery somewhere warm by the sea; and even had the idea of offering pub tours around London. In February 2021, they found Giacomo Orlando from Orlando e Didonè Vinicoltori, whose organic farmed (in process of certification) vines are situated in Craoretto, Prepotto at the heart of the Friuli Colli Orientali DOC. Giacomo has proven to be the ideal partner, agreeing to help make Token wines in a low intervention manner, while providing the expertise of a lifetime’s experience growing grapes and making wine in the region.
