Rhubarb Martini

This simple Rhubarb Martini made with Bertha's Revenge Irish Milk Gin is summer in a glass.


  • 60 ml Bertha’s Revenge Irish Milk Gin
  • 30 ml fresh rhubarb juice
  • 15 ml simple syrup (adjust to taste)
  • 15 ml freshly squeezed lemon juice
  • Ice cubes
  • Rhubarb slices or twists for garnish


  1. Prepare rhubarb juice: Wash and chop rhubarb into small pieces, blend until smooth and strain the mixture using a fine mesh sieve or cheesecloth to extract the juice. Discard the pulp. 
  2. Prepare simple syrup: In a saucepan, combine equal parts water and sugar, heat over low heat, stirring until the sugar dissolves. Allow the simple syrup to cool before using. 
  3. Mix: In a cocktail shaker, add 60 ml of Bertha’s Revenge Irish Milk Gin, 30 ml fresh rhubarb juice, 15 ml simple syrup and 15 ml freshly squeezed lemon juice. Add a handful of ice cubes to the shaker. 
  4. Shake: Secure the lid on the shaker and shake vigorously for about 15-20 seconds. 
  5. Strain: Using a strainer, pour the mixture from the shaker into a chilled martini glass. 
  6. Garnish: add a slice or twist of fresh rhubarb.Serve the Rhubarb Martini immediately while it’s cold.
