More on the Wine

The grapes were handpicked at the optimum stage of maturity, sorted out on the table, crushed, “cold-soaked” (12 h, 4 °C) and then pressed. After settling and racking, the must was fermented in ceramic spherical- and egg-shaped Clayver amphoras (Liguria, Italy). After the end of fermentation the wine was racked from total lees and returned to the same amphoras for aging on thin layer of lees for 5 months.

The wine is well-combined with seafood, fish dishes, various types of cheeses, salads, and Asian cuisine.
